Baldwin Hill Farms, home of the MapleLady and the SugarHouseChef, is located in Allegany County in Western New York, approximately fifty miles south of Buffalo. Our Sugar House sits on the top of Baldwin Hill Road, overlooking the hamlet of Rushford. Sugaring has been ongoing on our 200 acres for seventy five years. Bonnie and I began sugaring in 2001 and our sugar house is a modern version of the old sugar shack. We take great pride in producing delicious Light, Medium and Dark Amber Syrup and Grade B syrup, along with several other maple products.

Maple Syrup Facts:

• It is said that the Native Indians caught on to the maple process by watching Red Squirrels pierce the tree bark with their teeth, making a clear liquid flow. They boiled their food in this liquid thinking it was water. Much to their surprise, they discovered its delicate sweetness.
• Early settlers in our area learned about maple sugaring from these Indians and used it instead of refined white granulated sugar for everything as a sweetener.
• The darker the syrup the deeper the flavor.
• Maple syrup is produced only in the Northeastern part of the United States and Canada.
• New York State is the fourth largest producer in the world. Producing more than 250,000 gallons annually. Only Canada, Vermont and Maine produce more.
• It takes approximately 40 gallons of sap to produce a gallon of syrup.
• Pure maple syrup is Fat Free and Cholesterol Free. It has as much Calcium as a glass of whole milk.
